I am having company come in mid week (Wed). I am looking for a 'cook ahead' of time dinner (since I work) that all I will have to do is heat it up and serve - any suggestions? The only thing I have come up with so far is quiche and salad, or roast beef or chicken cooked ahead of time.

Cold poached salmon, tabouli, green salad. Gazpacho for first course and premium sorbet or ice cream for dessert.

* Fresh baguettes with EVOO for dipping * Soup (cold or 'thin & brothy' if it's hot) * Salad (buy bags of fancy mixed greens and make a KILLER dressing) * Set-and-forget slow roast (leg o' lamb, pork loin, etc.) * Sorbet or macerated fruit or melon balls w. flavored syrup.

This isn't cook ahead, but how about if on Tuesday you cut up chicken breasts or sirloin steak, skewer them, and place in a marinade for a Wednesday cookout?? You can serve with the bagged mixed greens (as Joe suggested) and corn on the cob or another veggie. Ice cream with Pepperidge Farm cookies for dessert.

Ice cream with Pepperidge Farm cookies for

In that theme, I often serve ice cream and chocolate cookie or brownie sandwiches for desert. Stack three with slabs of ice cream in between and drizzle over a hot fudge sauce from the supermarket that you've bing!ed in the microwave. Serve with a little choclate liqueur on the same plate (nice big white one) and it makes lots of oohs and ahhs at the table when actually, it's just a quick assembly of stuff you got at the shops...
